Fish Tacos. Mmm….Who knew healthy could taste so good!

Yesterday I really wanted fish tacos for lunch, but in an effort to save money I opted for the tuna fish sandwich I brought to work. Hmppfff.

Well the sandwich wasn’t so bad, but I still had a desire for fish tacos. So as I made a stop at Target last night I decided to pick up some things to create my own fish tacos. Now Target has done a great job with their market pantry products and their fish has proven to be no different. As much as I would rather go fresh, I am a single women and fresh just doesn’t last like frozen does. I’ve tried their Alaskan Salmon filets and they were delicious, so I decided their Tilapia must be on the same level. I later found out this was true.

So here’s what I made:

Yellow Corn Tortillas

Tilapia filet

Cilantro (to taste)

Braggs (I love to season alot of what I cook with this)

Taco Seasoning (just a sprinkle)

Mango Salsa (homemade – and turned out amazing)

Cottage cheese (substituting for sour cream)

Mango Salsa Recipe

    • 1-1/2 chopped tomato
    • 1 can diced green chiles
    • handful chopped frozen mangos
    • 1/2 chopped red onion
    • Salt/Pepper to taste
    • Taco seasoning to taste
    • Cilantro to taste

And there it is, I had delicious homemade fish tacos!
